As Panama’s leading culinary anthropologist, Charlie Collins continues to discover Panamanian ancestral culinary traditions, which has taken him to every corner of the country. He is the author of 3 cookbooks:
Charlie Collins 100 recetas, una historia (Charlie Collins 100 Recipes, One History): This book is a testament to the constant, passionate and creative work of Chef Charlie Collins, a tireless artist of flavors and textures. A book with recipes to enjoy that invites the reader to prepare and reinvent his appetizing proposals. This book, published in 2014 in commemoration of Hotel Panamonte’s centenary, captures the author’s life with charming anecdotes as well as the environment in which he grew up.
T´ACH Cocina autóctona panameña (T´ACH Panamanian Native Cuisine): For this book Chef Collins toured the whole country, researching and compiling the most representative recipes of Panamanian gastronomy. It won first place in the Gourmand World Cookbook Awards competition in China in 2018, in the World Culinary Heritage category. It should be noted that this work was made into a documentary that was presented at various international film festivals.
T´ACH II Cocina contemporánea panameña (T´ACH II Panamanian Contemporary Cuisine): Inspired by the recipes of T´ACH Panamanian Native Cuisine, this book reflects what is currently happening in Panama’s gastronomic scene. It includes recipes from 18 renowned chefs in the country.

Hotel Panamonte’s restaurant is named T’ACH, the word used by Chef Charlie Collins to title his last two books, T’ACH Cocina autóctona panameña (T’ACH Panamanian Native Cuisine) and T’ACH II Cocina contemporánea panameña (T’ACH II Panamanian Contemporary Cuisine); in the Emberá-Wounaan language this means plantains, and, also, food. The restaurant´s menu combines the Panamonte’s classic cuisine with dishes inspired by Panama’s native gastronomy.
You will also be able to enjoy a complete wine selection from our wine cellar located at the entrance of the restaurant.
